Instructions
- Brown the ground beef in a skillet over medium heat until no longer pink; drain excess grease.
- Stir in diced tomatoes (with juice), frozen mixed vegetables, and taco seasoning until well combined.
- Transfer the mixture to a slow cooker, stirring to distribute evenly.
- Layer half of the shredded cheese on top of the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle crushed potato chips over the melted cheese layer.
- Serve hot with optional toppings like sour cream or jalapeños.
