- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 1 cup cooked rice
- 1/2 cup black beans (drained and rinsed)
- 1/2 cup corn (canned or frozen)
- 1/2 cup shredded cheddar cheese
- 1 cup chopped lettuce
- 1/2 avocado, sliced
- 1/4 cup salsa
- 1/4 cup sour cream
- Fresh cilantro (optional garnish)
- Lime wedges (for serving)
Instructions
- Cook the rice according to package directions and set aside.
- In a skillet over medium heat, add olive oil and cook ground turkey until browned.
- Stir in taco seasoning with a splash of water and let it simmer for 2–3 minutes.
- While the turkey cooks, prepare all your toppings: chop lettuce, slice avocado, shred cheese, and gather salsa, sour cream, and other toppings.
- Assemble your bowl: layer rice at the bottom, then add ground turkey, black beans, corn, lettuce, avocado, salsa, shredded cheese, and sour cream.
- Garnish with cilantro and lime wedges, and serve immediately.
Notes
- This bowl is customizable; feel free to add other toppings like jalapeños or diced tomatoes.
- Leftover turkey can be stored in the fridge and used for up to 3 days.
