Description

Delicious homemade zucchini bread that’s moist and full of flavor.


Ingredients

Scale
  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 1 teaspoon salt
  • 3 cups flour
  • 2 cups zucchini (peeled and grated)

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat eggs, sugar, and oil in a mixing bowl.
  3. Stir in baking soda, baking powder, cinnamon, vanilla, salt, and flour.
  4. Fold in zucchini.
  5. Pour into bread pans lined with cooking spray.
  6. Bake for 45 to 60 minutes or when a toothpick inserted in the middle of the loaf comes out clean.

Notes

  • For added flavor, you can mix in nuts or chocolate chips.
  • Store leftovers in an airtight container to keep them moist.
