Description

Delicious roasted mini carrot peppers seasoned with garlic and herbs, perfect as a warm appetizer or side dish.


Ingredients

  • 1 pound mini carrot peppers
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh basil or parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Rinse the mini carrot peppers under cold water and slice them in half lengthwise.
  3. In a bowl, mix olive oil, minced garlic, chopped herbs, lemon juice, salt, and pepper.
  4. Toss the halved mini carrot peppers in the seasoning mixture until well-coated.
  5. Arrange the seasoned peppers on the baking sheet cut side up and roast for 15-20 minutes until tender and caramelized.
  6. Allow to cool slightly before serving warm or at room temperature.
