Description

Delicious banana muffins filled with chocolate chunks and walnuts, perfect for a quick breakfast or snack.


Ingredients

  • 4 medium overly ripe bananas, mashed
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups whole wheat pastry flour, or all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup semi-sweet or dark chocolate chunks
  • 1 cup walnuts, chopped
  • 1 stick (1/2 cup) salted butter, at room temperature
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • flaky sea salt to taste

Instructions

  1. Preheat the oven to 350°F.
  2. Line a 12-cup muffin tin with paper liners.
  3. In a bowl, mix the mashed bananas, coconut oil, maple syrup, eggs, and vanilla.
  4. Add the flour, baking soda, cinnamon, and salt, mixing until just combined.
  5. Stir in the chocolate or walnuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18–20 minutes, until set.
  8. Beat all Salty Maple Butter ingredients together until light and whipped.
  9. Serve with the warm muffins.

Notes

  • Ensure the bananas are very ripe for the best flavor.
  • You can substitute regular butter if coconut oil is not available.
