- 4 medium overly ripe bananas, mashed
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 2 eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups whole wheat pastry flour, or all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup semi-sweet or dark chocolate chunks
- 1 cup walnuts, chopped
- 1 stick (1/2 cup) salted butter, at room temperature
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- flaky sea salt to taste
Instructions
- Preheat the oven to 350°F.
- Line a 12-cup muffin tin with paper liners.
- In a bowl, mix the mashed bananas, coconut oil, maple syrup, eggs, and vanilla.
- Add the flour, baking soda, cinnamon, and salt, mixing until just combined.
- Stir in the chocolate or walnuts.
- Divide the batter evenly among the muffin cups.
- Bake for 18–20 minutes, until set.
- Beat all Salty Maple Butter ingredients together until light and whipped.
- Serve with the warm muffins.
Notes
- Ensure the bananas are very ripe for the best flavor.
- You can substitute regular butter if coconut oil is not available.
