Description

A delicious bulgogi sandwich topped with spicy slaw and garlic aioli.


Ingredients

Scale
  • 1 pound rib eye (thinly sliced)
  • 1/2 small pear (chopped)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 3 garlic cloves (sliced)
  • 1/2– inch ginger knob (peeled and sliced)
  • 2 teaspoons sesame oil
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 3 garlic cloves (grated)
  • 1 tablespoon lemon juice
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons rice vinegar
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons granulated sugar
  • 1 1/2 teaspoons gochugaru
  • 1/2 teaspoon sesame oil
  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/4 cup chopped scallions
  • 2 tablespoons chopped mint
  • 1 medium jalapeno (sliced)
  • 4 sandwich buns (toasted)

Instructions

  1. Prepare marinade. Combine chopped pear, soy sauce, brown sugar, garlic, ginger, sesame oil, and black pepper in a blender and puree until smooth. Pour marinade over rib eye, tossing to coat. Let sit for 20 minutes.
  2. Meanwhile, make garlic aioli. Combine mayonnaise, garlic, and lemon juice in a medium bowl. Season with salt and pepper and let sit for 20 minutes.
  3. Make dressing for slaw. Whisk together rice vinegar, soy sauce, olive oil, sugar, gochugaru, and sesame oil in a medium bowl. Combine green and red cabbage, scallions, mint, and jalapeno in a large bowl. Add dressing and toss to coat. Set aside.
  4. Heat 1 tablespoon oil in a large sauté pan over medium-high heat. Add bulgogi and cook until browned and caramelized, about 5 minutes. Remove from heat.
  5. Assemble sandwiches. Spread garlic aioli on the bottom sandwich buns and top with bulgogi and spicy slaw. Top with remaining bun and serve immediately.

Notes

  • For extra flavor, let the rib eye sit in the marinade for longer if time allows.
  • Feel free to adjust the level of spiciness by adding more or less jalapeno.
