Description

A delicious and easy recipe for baked chicken thighs paired with roasted cauliflower, drizzled with a sweet and savory sauce.


Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs
  • 4 cups cauliflower florets (about 1 medium head)
  • 4 cloves fresh garlic, minced
  • 1/4 cup honey
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons brown sugar

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, mix salt, pepper, and olive oil; coat chicken thighs well and place on one side of the baking sheet.
  3. Toss cauliflower florets with olive oil, salt, and pepper; spread on the other side of the baking sheet.
  4. In a small bowl, whisk together minced garlic, honey, soy sauce, and brown sugar until smooth. Drizzle half over chicken and cauliflower.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F and cauliflower is tender.
  6. Brush remaining sauce on halfway through cooking; serve hot.
