Description

A delicious creamy fettuccine pasta dish with chicken and spinach, perfect for any occasion.


Ingredients

  • 12 oz fettuccine pasta
  • 1 lb boneless skinless chicken breasts, diced
  • 4 cups fresh baby spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook fettuccine according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
  2. In a skillet over medium heat, heat olive oil. Add seasoned chicken and sauté until golden brown (6-8 minutes). Remove from skillet.
  3. In the same skillet, add minced garlic and sauté for about one minute until fragrant. Pour in heavy cream and scrape up any browned bits from the pan.
  4. Stir in spinach until wilted (about 2 minutes). Return chicken to the skillet and mix in grated Parmesan cheese.
  5. Add drained fettuccine to the skillet along with reserved pasta water as needed for creaminess. Toss until well combined.
  6. Serve immediately, garnished with extra Parmesan or cracked pepper if desired.

  • For a lighter version, consider using half-and-half instead of heavy cream.
