- 2 lbs Russet potatoes, peeled and chopped
- 1/2 cup unsalted butter (1 stick)
- 1/4 cup heavy cream
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Boil the peeled and chopped potatoes in salted water for 15-20 minutes until tender.
- While the potatoes are boiling, melt the butter in a saucepan over medium heat until browned (5-7 minutes).
- Drain the cooked potatoes, return them to the pot, and mash with the brown butter, heavy cream, salt, and pepper until smooth.
- Gently fold in the chopped thyme and rosemary.
- Transfer the mashed mixture to a greased baking dish and bake at 375°F for 25-30 minutes until bubbly and golden.
Notes
- For a creamier texture, add more heavy cream as desired.
- Can substitute herbs depending on personal preference.
