Description

A vibrant and healthy salad combining fresh green beans and creamy avocado.


Ingredients

  • 1 pound fresh green beans
  • 1 ripe avocado
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tablespoons Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and trim the green beans.
  2. Boil salted water; add green beans and cook for 3 minutes until bright green but crisp.
  3. Shock in an ice bath to halt cooking; drain.
  4. In a blender, combine avocado, garlic, Parmesan, Dijon mustard, lemon juice, salt, and pepper until smooth.
  5. Toss cooled green beans with the dressing until evenly coated.
  6. Serve immediately or chill before serving for enhanced flavors.
