- 3 tablespoons olive oil
- Zest of 1 lime
- Juice of 2 limes
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 2 garlic cloves, minced

- ¼ teaspoon cumin
- 2 ripe avocados, diced
- Juice of 1 lime
- Salt and pepper, to taste
- 2 tablespoons chopped fresh cilantro
- 2 cups cooked white rice (or brown rice)

Instructions
- Marinate and Cook the Chicken: Start by whisking together the marinade: olive oil, lime zest and juice, honey, mustard, minced garlic, cumin, salt, and pepper. Slice the chicken breasts in half lengthwise to make thinner cutlets—this helps them cook faster and soak up all that flavor. Place the chicken in the marinade and let it sit for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor). Heat a grill pan or skillet over medium heat. Cook the chicken for 4–5 minutes per side until nicely charred and cooked through. Let it rest for a few minutes, then slice or dice into bite-sized pieces.
- Prepare the Avocado Mixture: In a bowl, combine the diced avocado with lime juice, chopped cilantro, and a sprinkle of salt and pepper. Mash it slightly if you prefer a creamier texture, or leave it chunky for a fresh bite. I like mine somewhere in between.
- Make the Rice Base: Mix the cooked rice with olive oil, chopped cilantro, and a pinch of salt. This simple step elevates plain rice and ties it beautifully with the lime and herb flavors of the dish.
- Assemble the Stack: Use a food mold or simply layer in a bowl or jar. Start with a layer of rice, followed by a spoonful of the avocado mixture, then top with sliced honey lime chicken. Garnish with extra lime juice and a sprinkle of cilantro if desired. For an extra flair, I sometimes drizzle a touch of honey-lime sauce on top or serve it with a spoonful of Greek yogurt.
