Ingredients

  • 4 medium sweet potatoes (about 1 pound each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cups fresh green beans, trimmed and cut into 1-inch pieces
  • 2 cups carrots, peeled and sliced into thin rounds
  • 2 tablespoons unsalted butter
  • 3 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes thoroughly. Pierce each potato several times with a fork and place them on a baking sheet lined with parchment paper.
  3. Drizzle the sweet potatoes with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 40-45 minutes, or until tender.
  4. While the sweet potatoes are baking, melt the butter in a large skillet over medium heat.
  5. Add the sliced carrots and green beans to the skillet, cooking for about 5-7 minutes until tender-crisp.
  6. Drizzle honey over the vegetables, add garlic powder, thyme, salt, black pepper, and lemon juice. Stir well and cook for an additional 3-5 minutes.
  7. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato.
  8. Fluff the insides of the sweet potatoes, then spoon the honey glazed carrots and green beans into each potato.
  9. Garnish with chopped fresh parsley and serve immediately.
