- 4 medium sweet potatoes (about 1 pound each)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cups fresh green beans, trimmed and cut into 1-inch pieces
- 2 cups carrots, peeled and sliced into thin rounds
- 2 tablespoons unsalted butter
- 3 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and dry the sweet potatoes thoroughly. Pierce each potato several times with a fork and place them on a baking sheet lined with parchment paper.
- Drizzle the sweet potatoes with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 40-45 minutes, or until tender.
- While the sweet potatoes are baking, melt the butter in a large skillet over medium heat.
- Add the sliced carrots and green beans to the skillet, cooking for about 5-7 minutes until tender-crisp.
- Drizzle honey over the vegetables, add garlic powder, thyme, salt, black pepper, and lemon juice. Stir well and cook for an additional 3-5 minutes.
- Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit down the center of each potato.
- Fluff the insides of the sweet potatoes, then spoon the honey glazed carrots and green beans into each potato.
- Garnish with chopped fresh parsley and serve immediately.
