Description

A delicious stir-fry featuring ground chicken, vibrant vegetables, and tender rice noodles.


Ingredients

Scale
  • 200 grams rice noodles
  • 2 tablespoons vegetable oil
  • 1 pound ground chicken
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • salt to taste
  • black pepper to taste

Instructions

  1. Cook rice noodles according to package instructions until tender, then drain and rinse under cold water.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat, then add garlic and ginger and stir-fry for about 30 seconds until fragrant.
  3. Add ground chicken and cook, breaking it up with a spatula, until browned and cooked through, about 5 minutes; season with salt and black pepper.
  4. Stir in red bell pepper and carrot and cook for 2 to 3 minutes until vegetables are tender-crisp.
  5. Add cooked rice noodles, sweet chili sauce, soy sauce, rice vinegar, and sesame oil; toss until noodles are evenly coated and heated through.
  6. Stir in most of the green onions, reserving a few for garnish.
  7. Divide among plates and garnish with remaining green onions.

Notes

  • For extra flavor, consider adding some crushed red pepper flakes for heat.
  • Feel free to substitute vegetables based on what you have on hand.
