Description

Delicious and nutritious sunflower seed butter energy balls that make for a perfect snack!

Ingredients

Scale
  • 1/2 cup sunflower seed butter
  • 1/2 cup ground flaxseed
  • 1/2 cup hemp seeds
  • 1/4 cup sesame seeds
  • 1/4 cup unsweetened fine shredded coconut
  • 1/4 cup maple syrup
  • 1/2 tsp sea salt (optional)
  • 12 tsp pure vanilla extract (optional)

Instructions

  1. Add all the ingredients to a food processor and mix until it forms a thick dough.
  2. Roll the dough into 12 balls.
  3. Roll the balls in shredded coconut, if desired.
  4. Store in the fridge or freezer in a sealed container. I like them best stored in the freezer. They don’t freeze solid so you can pop one out and enjoy right away.

Notes

  • These energy balls are a great snack for on-the-go.
  • Experiment with different add-ins like chocolate chips or dried fruit!
