Scale
- 1/2 cup sunflower seed butter
- 1/2 cup ground flaxseed
- 1/2 cup hemp seeds
- 1/4 cup sesame seeds
- 1/4 cup unsweetened fine shredded coconut
- 1/4 cup maple syrup
- 1/2 tsp sea salt (optional)
- 1–2 tsp pure vanilla extract (optional)
Instructions
- Add all the ingredients to a food processor and mix until it forms a thick dough.
- Roll the dough into 12 balls.
- Roll the balls in shredded coconut, if desired.
- Store in the fridge or freezer in a sealed container. I like them best stored in the freezer. They don’t freeze solid so you can pop one out and enjoy right away.
Notes
- These energy balls are a great snack for on-the-go.
- Experiment with different add-ins like chocolate chips or dried fruit!
