Description

A delicious Shepherd’s Pie made with ground lamb and topped with creamy mashed potatoes.


Ingredients

Scale
  • 1 lb ground lamb
  • 1 medium onion, diced
  • 1 cup frozen peas and carrots
  • 1 tablespoon tomato paste
  • 1/2 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 2 cups prepared mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat oven broiler to high.
  2. In a large oven-safe skillet over medium-high heat, brown the ground lamb and diced onion until meat is cooked through, approximately 7-9 minutes.
  3. Drain excess fat from the skillet.
  4. Stir in tomato paste, frozen peas and carrots, beef broth, Worcestershire sauce, and dried thyme.
  5. Simmer for 5 minutes until the sauce has thickened slightly; season with salt and pepper.
  6. Spread the prepared mashed potatoes evenly over the meat mixture.
  7. Sprinkle with shredded cheddar cheese.
  8. Place the skillet under the broiler for 3-5 minutes or until the potatoes are lightly browned and cheese is melted.
  9. Let rest for 5 minutes before serving.

Notes

  • This dish is great for leftovers and can be made ahead of time and reheated.
  • Feel free to add other vegetables to the filling based on your preference.
