A hearty and flavorful crockpot chicken soup loaded with beans, corn, and spices.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn kernels, drained
- 1 (14 oz) can diced tomatoes
- 1 (4 oz) can diced green chiles
- 4 cups low-sodium chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Tortilla strips or crushed tortilla chips
- Shredded Monterey Jack or cheddar cheese
- Diced avocado
- Fresh cilantro, chopped
- Lime wedges
- Sour cream or plain Greek yogurt
Instructions
- Place the chicken breasts or thighs in the bottom of your crockpot.
- Add the diced onion, minced garlic, black beans, corn, diced tomatoes (with their juices), and diced green chiles on top of the chicken.
- Sprinkle the ground cumin, chili powder, smoked paprika, salt, and black pepper over the ingredients in the crockpot.
- Pour the chicken broth over everything, ensuring the chicken is mostly submerged.
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is cooked through and tender.
- Carefully remove the chicken from the crockpot and place it on a cutting board or plate.
- Using two forks, shred the chicken into bite-sized pieces.
- Return the shredded chicken to the soup in the crockpot and stir to combine.
- Let the soup warm through for another 15-20 minutes. Taste and adjust seasoning if needed.
- Ladle the hot soup into bowls.
- Top generously with tortilla strips or crushed chips, shredded cheese, diced avocado, chopped cilantro, a dollop of sour cream, and a squeeze of fresh lime juice.
Notes
- Feel free to add more vegetables or spices based on personal preference.
- This soup can also be served with crusty bread for a complete meal.
