A comforting creamy soup filled with Italian sausage and tortellini, perfect for a cozy dinner.
Ingredients

- 1 pound ground Italian sausage
- 1 cup diced carrots
- 1 small yellow onion (diced)
- 3 cloves garlic (minced)
- ¼ cup all purpose flour
- 2 teaspoons Italian seasoning
- ½ teaspoon mustard powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 5 cups chicken stock
- 1 cup heavy cream
- 2 cups spinach
- 2 cups frozen tortellini
- ½ cup parmesan cheese
Instructions
- Heat a heavy bottom pot on medium high heat and add the Italian sausage, carrots and onions until sausage is cooked through and veggies are soft, about 8-10 minutes.
- Add in the minced garlic and cook another 30 seconds.
- Sprinkle in the flour and stir until combined.
- Add in the Italian seasoning, mustard, salt and pepper.
- Stir in the chicken stock and let simmer for 1-2 minutes as it thickens.
- Stir in the heavy cream and add in the frozen tortellini, bringing it to a boil then reducing the heat to simmer.
- Add in the spinach and parmesan cheese, letting it simmer on low until spinach wilts and cheese is melted, about 1-2 minutes.
Notes
- This soup can be stored in the refrigerator for up to 3 days.
- For a healthier version, use turkey sausage and light cream.
