- 8 oz cream cheese, softened
- 4 oz goat cheese (optional, for tangier flavor)
- 1/2 cup dried cranberries, chopped
- 1/2 cup toasted pecans, chopped
- 2 tbsp green onions, chopped
- 1 tbsp honey
- Salt and pepper to taste
- 1 tsp orange zest (optional)
- 1/4 tsp cinnamon (optional)
- Fresh rosemary (optional)
Instructions
- In a medium bowl, beat softened cream cheese and goat cheese until smooth and fluffy. Stir in green onions, honey, salt, and pepper.
- Lay a sheet of plastic wrap on your counter. Spoon the cheese mixture into the center and shape it into a log. Wrap tightly and refrigerate for at least 2 hours until firm.
- Spread chopped cranberries and toasted pecans on a plate. Unwrap the chilled cheese log and roll it gently in the mixture, pressing lightly so the coating sticks evenly.
- Place the coated cheese log on a serving plate. Garnish with extra cranberries, honey drizzle, or herbs. Serve with crackers, pretzel chips, or apple slices.
