Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 can (14 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 cups low-sodium chicken broth
  • 1 cup fresh corn (or thawed frozen corn)
  • 2 tbsp taco seasoning
  • ½ cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by chopping the chicken into bite-sized pieces.
  2. In a large pot over medium heat, add 2 tbsp olive oil and sauté 1 chopped onion and 2 minced garlic cloves until translucent.
  3. Add the chicken and taco seasoning; stir until the chicken is coated and slightly browned.
  4. Pour in the diced tomatoes with juices and chicken broth; bring to a boil while stirring occasionally.
  5. Stir in the black beans, corn, and cilantro; reduce heat and simmer for about 20 minutes until heated through.
  6. Finish by squeezing fresh lime juice over the top before serving.
