Ingredients

  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 4 cups low-sodium vegetable broth
  • 1 tsp cumin powder
  • 1 tsp turmeric powder
  • 2 tbsp lemon juice (freshly squeezed)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare your ingredients by chopping the onion, garlic, and carrot. Rinse the red lentils under cold water until clear.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent. Add garlic and carrots; cook until softened.
  3. Stir in cumin and turmeric; toast for 1-2 minutes until fragrant.
  4. Add rinsed lentils and vegetable broth; bring to a gentle boil, then reduce heat to low.
  5. Cover partially and simmer for 20-25 minutes until lentils are tender, stirring occasionally.
  6. Blend the soup until smooth using an immersion blender; stir in lemon juice before serving.
