Coconut Chocolate Bars

Description

Delicious coconut chocolate bars with a buttery crust and a rich filling, perfect for any occasion.


Ingredients

  • 2 cups flour
  • 1 cup brown sugar
  • 1 cup butter
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 3 eggs
  • 1 can (14 ounce) sweetened condensed milk
  • 2 teaspoons vanilla
  • 1/4 cup butter
  • 1 cup chocolate chips
  • 4 cups sweetened shredded coconut (divided)

Instructions

  1. Preheat the oven to 350 F.
  2. Line a 13×9 inch baking pan with parchment paper so that the paper extends up the sides of the pan.
  3. In a medium mixing bowl, combine 2 cups of flour and 1 cup of brown sugar and stir to mix well.
  4. Melt 1 cup of butter in the microwave. Stir the melted butter into the flour mixture until well combined.
  5. Press the crust mixture into the bottom of the prepared baking pan. Bake for 12-15 minutes until lightly browned. Remove from the oven and cool for 10 minutes.
  6. Reduce the oven temperature to 325 F degrees.
  7. To make the filling, in a large bowl whisk together ½ cup of flour, ¼ cup of brown sugar, 3 eggs, 1 can of sweetened condensed milk, and 2 teaspoons of vanilla extract.
  8. Melt ¼ cup of butter in the microwave and then stir into the filling mixture.
  9. Add the 1 cup of semisweet chocolate chips and 3 cups of the shredded coconut to the filling mixture and stir well.
  10. Pour the filling mixture over the baked crust. Sprinkle the top with the remaining 1 cup of coconut.
  11. Bake the coconut bars at 325 F for 30 minutes, until golden brown on top.
  12. Cool the bars in the pan for 10 minutes, then carefully remove from the pan by lifting the sides of the parchment paper and moving the bars to a cooling rack.
  13. Cool completely to room temperature, then cut into bars and serve.

Notes

  • For best results, allow the bars to cool completely before cutting.
  • Store leftovers in an airtight container at room temperature.
