A hearty and creamy casserole filled with broccoli, chickpeas, and two types of cheese. Perfect for a comforting meal.

- 1 cup ranch dressing
- 4 cloves garlic (minced)
- 1 tsp smoked paprika
- 4 cups broccoli (cut into bite-sized florets)
- 2 15-oz cans chickpeas (drained)
- 2 cups quick-cooking brown rice
- 2 cups vegetable broth
- 1 cup grated mozzarella
- 1 cup grated cheddar
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a large (9×13 inch or similar) casserole dish.
- To the prepared dish, dump in ranch dressing, minced garlic, and smoked paprika. Stir to combine.
- Add broccoli, chickpeas, brown rice, vegetable broth, and half of the grated mozzarella and cheddar. Stir everything to combine.
- Sprinkle remaining cheeses on top. Cover tightly with aluminum foil.
- Bake for 25 minutes, or until rice is al dente. Remove foil and return pan to the oven uncovered for 10 minutes. Rice should be tender when finished.
- Serve warm, topped with freshly ground black pepper with crusty bread on the side.
Notes
- This dish can be refrigerated and reheated for later meals.
- Add other vegetables like bell peppers or spinach for extra nutrition.
- For a spicier version, add red pepper flakes or jalapeños.
