Description

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 6 medium potatoes, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • 2 tablespoons fresh chives, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a skillet over medium-high heat; sear the chicken for 3-4 minutes on each side until golden brown.
  4. In a greased baking dish, layer thinly sliced potatoes at the bottom and lightly season.
  5. Place seared chicken over the potatoes.
  6. Mix sour cream, chicken broth, thyme, and paprika in a bowl; pour over the dish.
  7. Top with shredded cheddar cheese and cover with foil.
  8. Bake for 30 minutes covered; then remove foil and bake an additional 15-20 minutes until bubbly.
