Description

This brown rice salad is a delicious and healthy dish packed with flavors and textures.


Ingredients

Scale
  • 1 teaspoon olive oil
  • 1/3 cup red onion (coarsely chopped)
  • 3 cups cooked brown rice
  • 1/4 cup cashews
  • 1/4 cup peanuts
  • 1/2 cup parsley (finely chopped)
  • 1/4 cup olive oil
  • 2 Tablespoons balsamic vinegar
  • 1 Tablespoon sesame oil
  • 1 Tablespoon soy sauce
  • 1 Tablespoon lemon juice
  • 1 garlic clove (grated)
  • salt & pepper to taste

Instructions

  1. Add olive oil to a skillet over medium heat. Once hot, add the onions and sauté for 7-8 minutes until the onions are soft.
  2. Meanwhile, add all of the ingredients for the dressing into a small jar with a tight fitting lid. Shake for about a minute until it completely comes together.
  3. Once the onions are soft, mix together the cooked rice, cashews, peanuts, and the onions.
  4. Pour the dressing over the rice and mix to combine. Add in the parsley and mix well.
  5. Serve immediately or cover and place in the fridge.

Notes

  • This salad can be made ahead and stored in the fridge for a quick meal.
