Description
This brown rice salad is a delicious and healthy dish packed with flavors and textures.
Ingredients

- 1 teaspoon olive oil
- 1/3 cup red onion (coarsely chopped)
- 3 cups cooked brown rice
- 1/4 cup cashews
- 1/4 cup peanuts
- 1/2 cup parsley (finely chopped)
- 1/4 cup olive oil
- 2 Tablespoons balsamic vinegar
- 1 Tablespoon sesame oil
- 1 Tablespoon soy sauce
- 1 Tablespoon lemon juice
- 1 garlic clove (grated)
- salt & pepper to taste
Instructions
- Add olive oil to a skillet over medium heat. Once hot, add the onions and sauté for 7-8 minutes until the onions are soft.
- Meanwhile, add all of the ingredients for the dressing into a small jar with a tight fitting lid. Shake for about a minute until it completely comes together.
- Once the onions are soft, mix together the cooked rice, cashews, peanuts, and the onions.
- Pour the dressing over the rice and mix to combine. Add in the parsley and mix well.
- Serve immediately or cover and place in the fridge.
Notes
- This salad can be made ahead and stored in the fridge for a quick meal.
