Description
Delicious and crispy blueberry churro bites tossed in cinnamon sugar.
Ingredients

- 1 cup water (Boiling)
- 1/2 cup unsalted butter (Cut into pieces)
- 1 cup all-purpose flour
- 1 teaspoon granulated sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup fresh blueberries (Rinsed and drained)
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 4 cups vegetable oil (For frying)
Instructions
- In a saucepan, combine water and butter. Bring to a boil.
- Remove from heat and stir in flour, sugar, and salt until a dough forms.
- Allow to cool slightly, then mix in eggs one at a time until smooth.
- Gently fold in blueberries.
- Heat vegetable oil in a deep fryer to 350°F (175°C).
- Transfer dough to a pastry bag fitted with a large star tip.
- Pipe small bites of dough into the hot oil, frying in batches until golden brown.
- Remove from oil and drain on paper towels.
- In a bowl, mix sugar and cinnamon.
- While churro bites are still warm, toss them in the cinnamon sugar mixture until well coated.
Notes
- Serve warm for the best flavor and texture.
- Store leftovers in an airtight container for up to 2 days.
