Description

Delicious and crispy blueberry churro bites tossed in cinnamon sugar.


Ingredients

Scale
  • 1 cup water (Boiling)
  • 1/2 cup unsalted butter (Cut into pieces)
  • 1 cup all-purpose flour
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup fresh blueberries (Rinsed and drained)
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 4 cups vegetable oil (For frying)

Instructions

  1. In a saucepan, combine water and butter. Bring to a boil.
  2. Remove from heat and stir in flour, sugar, and salt until a dough forms.
  3. Allow to cool slightly, then mix in eggs one at a time until smooth.
  4. Gently fold in blueberries.
  5. Heat vegetable oil in a deep fryer to 350°F (175°C).
  6. Transfer dough to a pastry bag fitted with a large star tip.
  7. Pipe small bites of dough into the hot oil, frying in batches until golden brown.
  8. Remove from oil and drain on paper towels.
  9. In a bowl, mix sugar and cinnamon.
  10. While churro bites are still warm, toss them in the cinnamon sugar mixture until well coated.
