A refreshing salad with chickpeas and black beans, perfect as a side or light main dish.
Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely diced
- 1/2 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/4 cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chickpeas, black beans, cherry tomatoes, red onion, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour the dressing over the bean mixture and toss well to combine.
- Let the salad sit for at least 10 minutes to allow flavors to meld.
- Serve chilled or at room temperature as a side or light main dish.
Notes
- This salad can be made a few hours in advance; just keep it refrigerated.
