Description
A delicious mix of vegetables air fried to perfection, great as a side dish.
Ingredients

- 1 cup broccoli florets
- 1 cup mushrooms (halved)
- 1 small sweet potato (cut into 1-inch cubes)
- 1 medium zucchini (halved and sliced into 1 1/2-inch thick pieces)
- 1 large bell pepper (sliced)
- 1 1/2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon Parmesan cheese (finely grated)
Instructions
- Preheat the air fryer to 390°F.
- In a large mixing bowl, add the chopped vegetables. Drizzle olive oil over the top, add the salt, pepper, and Parmesan cheese, and mix well.
- Add a single layer of the seasoned vegetables to the air fryer basket. Air fry for 10-13 minutes (mine took 10), shaking halfway through.
- Repeat the process until all the vegetables are cooked (until soft, tender, and crisp around the edges).
- Remove the vegetables from the air fryer basket and serve immediately.
