Description

A delicious mix of vegetables air fried to perfection, great as a side dish.


Ingredients

Scale
  • 1 cup broccoli florets
  • 1 cup mushrooms (halved)
  • 1 small sweet potato (cut into 1-inch cubes)
  • 1 medium zucchini (halved and sliced into 1 1/2-inch thick pieces)
  • 1 large bell pepper (sliced)
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon Parmesan cheese (finely grated)

Instructions

  1. Preheat the air fryer to 390°F.
  2. In a large mixing bowl, add the chopped vegetables. Drizzle olive oil over the top, add the salt, pepper, and Parmesan cheese, and mix well.
  3. Add a single layer of the seasoned vegetables to the air fryer basket. Air fry for 10-13 minutes (mine took 10), shaking halfway through.
  4. Repeat the process until all the vegetables are cooked (until soft, tender, and crisp around the edges).
  5. Remove the vegetables from the air fryer basket and serve immediately.
