Description
A delicious and hearty lasagna made with lean ground turkey, fresh spinach, and a mix of cheeses.

- 1 tbsp olive oil
- 1 lb lean ground turkey
- 1 medium yellow onion (finely chopped)
- 2 cloves garlic (minced)
- 1/4 tsp black pepper
- 1 tsp Italian seasoning
- 2 tbsp tomato paste
- 1 jar (710mL) pasta sauce (of your choice)
- 4 cups baby spinach (roughly chopped)
- 1 box (375g) oven-ready lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese (divided)
- 1/2 cup grated parmesan cheese (divided)
- 2 tsp dried parsley
- 1/4 tsp salt
- 1 large egg (beaten)
Instructions
- Warm olive oil over medium-high heat. Brown the turkey, diced onions, and minced garlic until no pink remains.
- Stir in the tomato paste, Italian seasoning, and black pepper. Add the jar of pasta sauce along with the chopped spinach and stir together. Allow the mixture to simmer for approx. 5 minutes. Taste and season with salt if desired then remove from heat.
- In a medium mixing bowl, make the cheese mixture. Combine the ricotta cheese with 1 ½ cups of the shredded mozzarella, ¼ cup of the parmesan, dried parsley, egg, and salt.
- Spread 1 cup of the meat sauce mixture in a 9×13-inch pan or casserole dish. Top with 3 lasagna noodles then spread with 1 cup cheese mixture and then 1 cup meat sauce. Repeat two more times, followed by 3 lasagna noodles and the remaining meat sauce.
- Cover the dish with foil and bake for 45 minutes at 350F.
- Remove foil and sprinkle with remaining mozzarella and parmesan. Return to the oven, uncovered, for 15 minutes or until browned and bubbly. Broil for 1-2 minutes if desired.
- Let the lasagna rest for 10-15 minutes until cutting and serving.
Notes
- Feel free to add other vegetables or seasonings according to your preference.
- Letting the lasagna sit before cutting helps the layers set.
