Description
This slow cooker chicken and stuffing recipe is an easy and delicious dinner option that combines tender chicken breasts with ham, swiss cheese, and a rich creamy sauce, all topped with stuffing mix.
Ingredients
Scale
- 2 pounds boneless skinless chicken breasts
- 4 slices ham
- 4 slices swiss cheese
- 10 ounces cream of chicken soup
- ¼ cup whole milk
- 1 tablespoon dijon mustard
- 2 tablespoons parmesan cheese
- dash nutmeg
- 6 ounces dry chicken stuffing mix
Instructions
- Spray a slow cooker liner with cooking spray. Place the 4 chicken breasts in the bottom.
- Place a slice of ham on the top of each chicken breast, then top with a slice of swiss cheese.
- In a small bowl, whisk together the cream of chicken soup, milk, mustard, parmesan cheese, and nutmeg. Pour this over top the chicken.
- Sprinkle the dry stuffing mix over the top.
- Cover and cook on high for 3-4 hours or on low for 6-7 hours, or until the chicken is fork tender. Season with salt and pepper to taste.
- NOTE: If desired, uncover the last 45 minutes of cooking so that the stuffing firms up a little. It won’t be a “crispy” stuffing topping, but can help the texture. This isn’t necessary though and tastes just as good without.
- OR you can wait and sprinkle the dry stuffing mix on top about 30 minutes before serving.
Notes
- Uncovering for the last 45 minutes helps firm up the stuffing texture.
- For a less creamy dish, use less cream of chicken soup.
