Description

Ingredients

  • 113 g unsalted butter, softened
  • 200 g granulated sugar
  • 1 large egg
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 240 g all-purpose flour
  • 1 teaspoon baking powder
  • 0 teaspoon salt
  • 60 g powdered sugar, for coating

Instructions

  1. Cream together the softened cream cheese and butter until smooth and lump-free.
  2. Add the sugar and beat until light and fluffy.
  3. Mix in the egg, lemon zest, and lemon juice until fully combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix dry ingredients into the wet ingredients to form a soft dough.
  6. Cover and refrigerate the dough for at least 1 hour.
  7. Preheat oven to 350°F (175°C).
  8. Roll chilled dough into tablespoon-sized balls.
  9. Coat each dough ball generously in powdered sugar.
  10. Place on a lined baking sheet and bake for 10-12 minutes until edges are set and centers remain soft.
  11. Let cookies cool on the pan for 5 minutes before transferring to a wire rack.
