- 113 g unsalted butter, softened
- 200 g granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 240 g all-purpose flour
- 1 teaspoon baking powder
- 0 teaspoon salt
- 60 g powdered sugar, for coating
Instructions
- Cream together the softened cream cheese and butter until smooth and lump-free.
- Add the sugar and beat until light and fluffy.
- Mix in the egg, lemon zest, and lemon juice until fully combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually mix dry ingredients into the wet ingredients to form a soft dough.
- Cover and refrigerate the dough for at least 1 hour.
- Preheat oven to 350°F (175°C).
- Roll chilled dough into tablespoon-sized balls.
- Coat each dough ball generously in powdered sugar.
- Place on a lined baking sheet and bake for 10-12 minutes until edges are set and centers remain soft.
- Let cookies cool on the pan for 5 minutes before transferring to a wire rack.
