Key Ingredients for the Best Mini Cheesecake

Making the best mini cheesecake involves choosing the right ingredients that come together to create a creamy, dreamy dessert. Each component plays a vital role in achieving that ideal texture and flavor.

Cream Cheese

Using full-fat cream cheese is essential for that signature dense and creamy texture. Light cream cheese can lead to a watery result, which we definitely want to avoid. Let it sit at room temperature for a bit before mixing to ensure a smoother batter.

Sugar

I rely on granulated sugar to balance the tanginess of the cream cheese. It not only sweetens but also helps achieve a lovely, velvety consistency. Remember, a touch of sweetness is key, but don’t overdo it!

Eggs

Eggs are indispensable in this recipe for their role as a binding agent. Using large eggs, at room temperature, allows for better incorporation into the batter and contributes to a rich end result.

Sour Cream

A swirl of sour cream adds that delightful tang and enhances the creaminess. If you don’t have sour cream on hand, Greek yogurt works wonderfully as a substitute.

Crust Ingredients

The graham cracker crust brings a crunch that perfectly complements the creamy filling. A mix of crumbs, melted butter, and a pinch of sugar creates a rich base that holds it all together beautifully.

Vanilla Extract

A splash of vanilla extract elevates the overall flavor profile. Opt for pure vanilla extract for the best taste—it makes a big difference!

By selecting these key ingredients thoughtfully, you’re set to create the best mini cheesecake that will leave guests asking for seconds.

Cooking Tips and Notes for Making Mini Cheesecakes

Creating the best mini cheesecake is not just about following the recipe; it’s also about embracing a few helpful tips and tricks that elevate your dessert from good to fabulous. As someone who has made these delectable treats countless times, I’ve discovered a few secrets that make all the difference.

Ideal Cream Cheese Consistency

When preparing your cream cheese, make sure it’s at room temperature. Cold cream cheese can lead to lumps that never fully blend in, resulting in a less-than-smooth filling. To speed up the process, cut your cream cheese into small cubes and let it sit for about 20-30 minutes before mixing.

Use a Water Bath

For creamier texture, consider using a water bath while baking. Wrap your mini cheesecake pans in foil to prevent water from seeping in, then place them in a larger baking dish filled with hot water. This helps regulate temperature and prevents cracks.

Perfectly Portion Your Crust

For an evenly distributed crust, use a measuring spoon or a small cookie scoop. Press it down firmly with the back of a spoon or a small cup for a nice, compact base. A well-formed crust adds to the overall texture and taste of your best mini cheesecake.

Incorporating these tips will surely enhance your mini cheesecake-making experience, ensuring that each bite is rich, creamy, and utterly delightful!

Description

Delicious mini cheesecakes made with a buttery crust and creamy filling.

Ingredients

Scale
  • 25 vanilla wafers or 8 full sheet graham crackers
  • 1 1/2 Tablespoons granulated sugar
  • 4 Tablespoons unsalted butter, (melted)
  • 2 8 oz (16 oz) full fat, brick-style cream cheese, (very soft)
  • 2/3 cup granulated sugar
  • 1/2 cup sour cream (at room temperature)
  • 1 1/2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs (at room temperature)
  • 1 large egg yolk (at room temperature)
  • Whipped Cream and Berries ((See Notes))
  • Lemon Curd ()
  • Glazed Strawberries ()
  • Strawberry Sauce ()
  • Blueberry Sauce
  • Cherry Pie Filling, (chilled)
  • Caramel Sauce (with candy bars! )
  • Chocolate Sauce ()

Instructions

  1. Preheat the oven to 350°F. Lightly spray a standard 12-count muffin pan with nonstick cooking spray, then add the cupcake liners (this prevents the liners from sticking to the pan).
  2. Add the wafers/crackers to a food processor and pulse until finely ground (or crush in a bag with a rolling pin). Add the butter and sugar and pulse (or stir) until evenly combined. Add 1 tablespoon to each liner, then firmly press down with the back of a glass or measuring cup. Bake for 6 minutes, then allow to cool on a wire rack for at least 5 minutes before filling. Reduce the oven temperature to 325°F.
  3. Add the cream cheese to the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed (4) until light and fluffy, about 2 minutes (no less!). Add sugar and beat one additional minute.
  4. Add the sour cream, lemon zest, vanilla, and salt, and beat just until blended. Add the eggs one at a time, followed by the egg yolk, beating as little as possible, just until combined after each addition (overbeating once you add the eggs can cause cracks and the cheesecake to rise, then deflate).
  5. Divide the mixture between the cupcake liners, filling each to the top. Drop the pan on the counter a few times to remove excess air bubbles.
  6. Bake until the edges are set, and the centers slightly jiggle when you tap the pan, 17-21 minutes. Don’t overbake them, or they won’t be as creamy.
  7. Let the pan cool on a wire rack for 1 hour, then refrigerate. Then cover with plastic wrap and refrigerate for at least 8 hours. They can be stored in the fridge for up to 5 days, but are at peak freshness after chilling for 8-24 hours.
  8. Top with desired topping such as whipped cream and berries, lemon curd and berries, glazed strawberries or strawberry sauce, blueberry sauce, caramel sauce, or chocolate sauce, etc.
